Chicken Broccoli Stir Fry
Ingredients
Sauce:
- 1.2 tbsp cornflour/cornstarch
- 1.8 tbsp soy sauce
- 0.9 tbsp Chinese cooking wine or Mirin
- 1.8 tbsp oyster sauce
- 1.2 tsp sesame oil
- Dash of white pepper
Stir fry:
- 1.2 tbsp oil
- 0.3 onion
- 1.2 garlic cloves
- 300g/0.6 lb chicken thighs or breast, thinly sliced
- 240g/ 8.4 oz broccoli florets
- 0.75 cups water
Directions
- Broccoli: Steam or boil the broccoli using your preferred method until it’s cooked to your liking (it won’t cook further in the stir-fry). I typically steam it in the microwave for 3 minutes on high. Drain thoroughly.
- Sauce: Combine the cornflour with the soy sauce, then mix in the remaining sauce ingredients until smooth.
- Tenderizing option: If using chicken breast, consider tenderizing it with this method. (This step isn’t necessary for chicken thighs.)
-
Cook: Heat the oil in a large skillet over high heat. Add the garlic and onion, stirring for about 10 seconds until the garlic turns golden. Next, add the chicken and cook for approximately 2 minutes, or until it’s just cooked through.
